These delicious cookies are so easy to bake, they can be whipped up in under 30 minutes. They are rich in fibre, and energy, and keep in an air tight container for weeks (unless they are demolished first!)

Ingredients

Ready in 30 minutes and makes approx 40 cookies

2 cups muesli – with a combination of dried fruit, nuts and seeds of your choice.

2 cups plain flour

2 cups thread coconut

2 cup soft brown sugar

250 gr butter

1/2 cup golden syrup

4 tbsp boiling water

1 tsp baking soda

Method

Preheat the oven to 160 degrees C fan bake and line two baking trays with baking paper.

Combine muesli, flour, coconut and brown sugar in a bowl. Combine butter, golden syrup and water in a pot and heat until the butter has melted. Stir in baking soda , then mix into the dry ingredients until well mixed.

Roll tablespoons of mixture into balls and place on lined oven trays. Allow room for the cookies to spread. Bake for 20-25 minutes until golden. For crunchier cookies, bake for a further 10 minutes. Allow to cool on the oven trays and store in an airtight container.
